Peel the potatoes and cut into fairly thick chips. Rinse in a colander to remove excess starch then pat dry with kitchen paper. Heat your deep-fat fryer to 130°C. Be careful when using a deep fat fryer.
Gently lower the chips into the hot oil. Fry for 15 minutes, or until crisp and golden brown. Remove the chips from the pan and set on kitchen paper to remove excess oil. Depending on the size of your deep fat fryer, you may need to cook in two batches. Do not overload your deep fat fryer. Sprinkle with salt and vinegar to serve.
